Bhatwani: Food of Uttarakhand - By Chef Mahesh Singh

Ingredients:
- Yellow Bhatt: 250 grams
- Chopped Onion: 1
- Chopped Garlic: 2 tbsp
- Coriander Powder: 1 tbsp
- Red Chilli: as per taste
- Cumin Seeds: ½ tbsp
- Turmeric Powder: ½ tsp
- Asafoetida: 2 pinches
- Salt: as per taste
- Ghee: 3 tbsp
Method:
1. Dry roast the Yellow Bhatt (Choli) in an iron pan on low flame for about 4-5 minutes.
2. Put the roasted Bhatt Dal in a mortar and pestle and grind it coarsely. This is optional. If you do not have the above, then use a grinder mixer.
3. Heat ghee in a pan and add cumin seeds, asafoetida, red chillies, chopped garlic, and chopped onions.
4. Add coriander powder, turmeric powder, and salt to taste. Cook well for 4-5 minutes.
5. Add the coarsely ground Yellow Bhatt.
6. Now cook it on low flame while stirring occasionally.
7. Gradually add cooked rice water 3-4 times to the mixture, stirring continuously to get a smooth consistency.
8. When it becomes thick, turn off the gas and add chopped coriander.
9. Serve hot with steamed rice.
