Mango Tres Leches - By Chef Anant Bansode

Indulge in Chef Anant Bansode's exquisite Mango Tres Leches, a tropical twist on a classic favorite.

Ingredients:

- Eggs – 4 Nos.

- Castor Sugar – 120 Gms

- Refined Flour – 100 Gms

- Corn Flour – 20 Gms

- Milk – 60 Ml

- Vanilla Essence – 10 Ml

- Cooking Cream – 200 gms

- Condensed milk - 100 gms

- Full fat milk – 70 gms

- Mango Pulp – 50 gms

- Cardamom Powder – Pinch

 

Method:

For Sponge:

1. Whip eggs with vanilla essence until it becomes floppy.

2. Gradually add castor sugar and whip until soft peak.

3. Add flour and corn flour, then fold it into the egg batter.

4. Add milk and mix slowly.

5. Pour batter into a baking pan or mould and bake at 175 degrees Celsius for 25 minutes.

For Soaking:

1. Mix all soaking ingredients together and simmer them slowly.

2. Remove the skin of the sponge and pour syrup on top, then keep in the chiller for 45 minutes.

3. Serve with fresh mangoes and whipped cream, garnish as desired.
