Ragi Jaggery Chocolate Cake - By Sonali Mitra

Ingredients:

- Jaggery: 175 grams

- Curd: 85 grams

- Milk: 175 ml

- Ossoro 24 carat Vanilla

- Oil: ½ cup

- Ragi flour: 100 grams

- Whole wheat flour: 100 grams

- Cocoa powder: 15 grams

- Baking powder: 1.5 tsp

- Baking Soda: ½ tsp

- Pinch of salt

 

Method:

1. In a large mixing bowl, take the measured oil. Add jaggery to this and whisk it well.

2. Next, add curd, milk, and vanilla. Combine well.

3. Sieve in the dry ingredients – ragi flour, whole wheat flour, cocoa powder, baking powder, baking soda, and salt.

4. Fold the dry ingredients into the wet mixture until all of it comes together.

5. Transfer this mixture to a cake tin lined with parchment paper and bake at 170-180 degrees Celsius until done.

6. Garnish with chocolate ganache and sliced pistachios.
