Arsa: Uttarakhand's Famous Traditional Dessert - By Chef Rajendra Singh

Arsa has become a beloved part of Uttarakhand's culinary
heritage over the years. In the Garhwal region of Uttarakhand, there is a
unique tradition of giving kaleu (sweets) on special occasions like
marriage-marriage (Byo-Barat). The dish is particularly popular during festive
occasions when families come together to share in its sweet, crunchy goodness.
Ingredients:
• 500 grams Rice
• 250 grams Jaggery (Brown Sugar)
• 1 liter Mustard oil for deep frying
Instructions:
1. Soak the rice in water for 6 hours.
2. After 6 hours, drain the water from the rice and tie the rice in a muslin cloth to dry it up.
3. Grind the rice into a fine powder.
4. Make a thick syrup of jaggery by boiling the jaggery in water until it thickens.
5. Mix the jaggery syrup and rice in the same manner as dough is prepared.
6. Heat oil in a pan. Make balls out of the mixture and roll them into the shapes of puris or doughnuts.
7. Deep-fry them in hot oil and serve hot.
