Cabinet Pudding - By Chef Indrajit

Time: Approx. 80 minutes

Baking Temperature: 180-190°C

Baking Time: Approx. 40-50 minutes         

Ingredients:

• Eggs - 10 Nos.

• Whole Milk - 910 gms

• Blended Sugar - 200 gms

• Dry Fruits - 100 gms

• Cinnamon Powder - 2 gms

• Vanilla Essence - a few drops

• Dry Cake Cubes - 250 gms

         

Method:

First of all, prepare the custard:

1. Mix whole eggs and blended sugar thoroughly.

2. Add warm milk and mix well again.

3. Add cinnamon powder and vanilla essence. Mix well and strain the custard.         

For the pudding:

1. In a greased mould, arrange dry cake cubes.

2. Sprinkle dry fruits such as cashew nuts, raisins, almonds, and pistachios over the cake cubes.

3. Pour the custard over the cake and dry fruits.

4. Bake using a double boiler method.

5. Serve hot or warm.
