It is a common misconception that to be a successful chef, one must be
a non-vegetarian. When I joined hotel management in Varanasi in 2000, this
question frequently troubled me. Coming from a strict vegetarian family, I
often sought answers from experienced chefs to quell my fears. Their positive
responses eventually dispelled all my doubts.
One chef told me that
being a vegetarian or non-vegetarian has absolutely nothing to do with being a
good chef. Cooking, like any other creative activity, is not limited by dietary
preferences. Creativity is linked to the left hemisphere of the brain, and all
artists are guided by this part of their brains. One can be as creative in
preparing a vegetarian dish as in a non-vegetarian one.
Of course, in the
beginning, a strict vegetarian may feel disturbed by the smells emanating from
non-vegetarian food. However, patience is key. Even medical students face
discomfort when they first encounter a cadaver, but their goals and patience
keep them committed to their field.
To conclude, it is the
mind that is the master. Creativity and passion for cooking transcend dietary
boundaries, making it possible for a vegetarian to excel as a chef.
