Chawal ke Fare is a typical North Indian dish
which is very popular in eastern parts of Uttar Pradesh, Bihar and
Chhattisgarh.
Ingredients:
- 1 cup Rice Flour
- 1 cup Water
- 1 tbsp Desi Ghee
- Salt to taste
- 1/4 tbsp Split Bengal Gram
- 2-3 Green Chilies, chopped
- 1 tsp Chopped Ginger
- 1 tsp Coriander Powder
- Freshly chopped Coriander,
a few sprigs
- 1/2 tsp Turmeric Powder
- 1/2 tsp Red Chili Powder
Method:
1. Start by heating water in
a pot until it comes to a boil. Once boiling, turn off the heat and add rice
flour, desi ghee, and salt to the water.
2. Allow the mixture to cool
slightly, then knead it into a dough. If the dough is too stiff, add a few
drops of water to soften it.
3. For the stuffing, soak
split washed black gram and split Bengal gram for at least an hour, then grind
them coarsely.
4. Mix the ground grams with
chopped green chilies, chopped ginger, chopped fresh coriander, coriander
powder, and salt to taste.
5. Take equal portions of the
dough and roll them into small balls, then flatten them into discs like pooris.
6. Place a portion of the
stuffing in the center of each disc and fold them over to enclose the filling.
7. Arrange all the prepared
fare on a greased steamer.
8. Steam the fare until they
are cooked through and tender.
9. Once steamed, serve the
fare hot with tomato and garlic chutney on the side.
