Cheese Cigar Rolls are a delectable appetizer inspired by Middle Eastern and Mediterranean cuisines. These crispy rolls are filled with a savory mixture of cheese and vegetables, wrapped in delicate phyllo pastry sheets, and fried to golden perfection. Served alongside a tangy Chukandar Ki Chutney, these cigar rolls are sure to impress your guests at any gathering.

Ingredients:

- Boiled Potato – 50 gm

- Phyllo Pastry Sheet – 2 nos.

- Shredded Mozzarella Cheese – 50 gm

- Crumbled Feta Cheese – 25 gm

- Diced Bell Peppers (Red, Green, or Yellow) – 50 gm

- Diced Zucchini – 30 gm

- Broccoli – 25 gm

- Black Olives – 5 gm

- Salt – 15 gm

- Bread Crumbs – 20 gm

- Chopped Garlic – 5 gm

- Maida (All-Purpose Flour) – 10 gm

- Oil – 80 ml


Method:

1. Heat oil in a pan and add chopped garlic. Sauté until golden brown.

2. Add shredded mozzarella cheese, crumbled feta cheese, diced bell peppers, diced zucchini, broccoli, black olives, fresh basil or parsley, dried oregano, salt, and black pepper to the pan. Mix well to combine.

3. Cook the mixture until the cheese melts and the vegetables are tender. Adjust seasoning to taste.

4. Lay one phyllo pastry sheet flat on a clean, dry surface. Brush the entire sheet with melted butter or olive oil.

5. Place another phyllo pastry sheet on top and brush it with butter or oil.

6. Cut the layered sheets into strips about 2-3 inches wide and 8-10 inches long.

7. Place a spoonful of the cheese and vegetable filling at one end of each strip.

8. Roll the pastry strips tightly to form cigar-shaped rolls, sealing the ends with a paste made from maida (all-purpose flour) and water.

9. Heat oil in a deep frying pan or skillet. Once hot, fry the cigar rolls until golden brown and crispy.

10. Drain excess oil on paper towels and serve hot with Chukandar Ki Chutney on the side for dipping.
