You don't need to justify eating a whole cake anymore as it's free from sugar and gluten.


Time: 30 minutes  

Temperature: 190°C  


Ingredients:

- Pumpkin - 1.5 kg

- Caster Sugar - 180 gm

- Orange Juice - 1.8 ltr

- Eggs - 12 nos.

- Refined Oil - 0.8 ltr

- Refined Gluten Flour - 1.5 kg

- Walnuts - 120 gm

- Golden Raisins - 120 gm

- Baking Soda - 0.6 gm

- Baking Powder - 0.6 gm

- Nutmeg Powder - 0.4 gm

- Dark Chocolate (No added Sugar) - 0.5 kg  


Method:

1. Put all the dry ingredients in a large bowl and stir to combine.

2. Beat the eggs with sugar into the refined oil, stir in the orange zest and juice, and then mix it with the dry ingredients until combined (with hand if necessary).

3. Grease the cake pan. Pour the batter into the cake mould or pan and leave to bake.

4. Cool and layer it, then cover it with cheese frosting.

5. Garnish with chocolates.
