Crispy Tofu with Chilli Crab Sauce - By Chef Azad Mohammed

Indulge in Chef Azad Mohammed's tantalizing creation: Crispy Tofu with Chilli Crab Sauce, a fusion masterpiece that delights the senses.

Ingredients:

- Vegetable Oil: 20 gm

- Chopped Garlic: 5 gm

- Chopped Onion: 25 gm

- Tofu (cut into batonnet): 200 gm

- Corn Starch: 30 gm

- Dark Soy Sauce: 5 gm

- Salt: To Taste

- Black Pepper: To Taste

- Shredded Red Chilli Finger: 2 gm

- Soup Stock: 70 gm

- Chilli Crab Sauce: 30 gm

- Chopped Spring Onion: 5 gm


Method:

Tofu Preparation:

1. Cut the tofu into large pieces.

2. Coat the tofu well with salt, pepper, and corn starch.

3. Place the tofu in the chiller for 10 to 15 minutes.

4. Heat oil in a deep fryer and deep fry the tofu until crispy.

5. Drain the tofu well and set it aside.

6. Sprinkle crushed black pepper on the tofu for flavor.


Sauce Preparation:

1. Heat oil in a pan.

2. Sauté garlic and onion until fragrant.

3. Add dark soy sauce, chilli crab sauce, and soup stock to the pan.

4. Add red chilli fingers to the sauce for spiciness.

5. Place the crispy tofu into the sauce and sauté well, allowing it to absorb the flavors.

6. Prepare a thickening agent by mixing corn flour with water.

7. Add the corn flour mixture to the sauce to thicken it.

8. Transfer the tofu and sauce mixture to a hot plate.


Garnish:

1. Sprinkle chopped spring onions on top of the dish for garnish.


Serving:

1. Serve the tofu hot as a side dish alongside main course items.
