Curried Indian Masala Bread - By Chef Indrajit

Ingredients:

For Dough:

- 1250 gm Refined Flour

- 80 gm Sugar

- 10 gm Salt

- 100 ml Refined Oil

- 30 gm Yeast

- 300 ml Water (approx.)


For Masala:

- 100 gm Onion

- 50 gm Ginger

- 15 gm Whole Cumin

- 75 ml Refined Oil

- 5 gm Turmeric Powder

- 5 gm Cumin Powder

- 5 gm Coriander Powder

- 5 gm Red Chilli Powder

- 50 gm Fresh Coriander Leaves

- Salt, to taste


For Topping:

- 250 gm Amul Processed Cheese


Method:

Dough Preparation:

1. In a bowl, mix sugar, 100 ml water, and yeast. Allow it to rest for 15-18 minutes for the yeast to activate.

2. In a separate bowl, sieve the flour and mix salt with refined flour using the rubbing method.

3. Combine the flour mixture with oil and yeast solution.

4. Knead the mixture thoroughly to form gluten in the dough.

5. Let the dough rest for 15-18 minutes.


Masala Preparation:

1. Heat refined oil in a frying pan.

2. Add whole cumin. Once it starts to crackle, add chopped onion and ginger. Saute until golden brown.

3. Add all the spices along with salt. Cook the mixture thoroughly and set it aside to cool.


Bread Preparation:

1. Mix the masala with the dough.

2. Divide the dough into equal portions and shape them into braids.

3. Let the dough rest for 15 minutes until it doubles in size.

4. Once the dough rises, spray water on top, sprinkle grated cheese, and bake at 195 degrees Celsius for approximately 25-30 minutes.

5. After baking, splash refined oil on top to add shine and keep the bread soft.

6. Serve the bread for a meal at any time of the day.
