In some parts of Gujarat, it is known as "kutchi blow,".
Hello foodies, here I am again with my foodie friends, sharing a Kutchi
chat recipe - the ready-to-eat “kutchi kadak." In some parts of Gujarat,
it is known as "kutchi blow," and you can create two recipes by
adding one more ingredient, turning it into the special Mandavi Kutch chat
recipe called "Gokul plate." I'm excited to share the ingredients and
recipe with you, and I hope all my friends will like and enjoy it.
Ingredients:
Boiled & Chopped
Potatoes - 250g
Boiled & Mashed
Potatoes - 100g
Boiled & Mashed Sweet Potatoes - 100g
Garlic Chutney - 5
tbsp
Meethi Chutney - 10
tbsp
Salt - To taste
Kashmiri Red Chilli Powder - 1 tbsp
Red Chilli Powder - 2
tsp
Haldi Powder - ½ tsp
Oil - 5 tbsp
Water - As needed
Dabeli Masala - 100g
Garam Masala Powder
- 2 tsp
Masala Sing (Masala
Peanuts) - 50g
Fried Masala Chana
Dal - 50g
Chopped Fresh
Cilantro - 4 tbsp
Finely Chopped Medium Onions - 2
Medium, Chopped
Tomatoes - 2
Pomegranate Kernels
(Optional)
Fine Sev, Chopped
Cashews, and Tutti Frutti for Garnish
(Optional)
Rusks - 5 (for
Kadak)
Dabeli Bun (for Gokul Plate)
Method:
For Masala Subji:
1. Heat oil in a
pan, add 1 tablespoon garlic chutney, 2 tablespoons methi chutney, and dabeli
masala. Mix well.
2. Add salt, haldi,
red chilli powder, garam masala powder, Kashmiri red chilli powder. Mix and
cook for a few seconds.
3. Add boiled and chopped potatoes, mix well, and cook. Set aside.
For Rasa:
1. For aloo rasa,
heat oil, add 1 tablespoon garlic chutney, 1 tablespoon methi chutney, and
dabeli masala. Mix well.
2. Add all dry
masalas, mashed boiled potatoes, and hot water. Mix and cook until semi-thick.
Set aside.
3. Repeat the process for sweet potato rasa.
For Assembling:
1. In a plate/bowl,
add sweet potato rasa, rusk pieces, boiled aloo masala, potato rasa, masala
peanuts, fried masala, chana dal, chopped onion, tomatoes, garlic chutney,
methi chutney, and both rasas.
2. Garnish with Sev,
chopped cashews, tutti frutti, and pomegranate.
3. If making Gokul
plate, use fresh pav pieces instead of rusk, and garnish with Sev, chopped
cashews, tutti frutti, onion, tomato, and coconut.
Chef Tips:
You can also make
dabeli from the potato mixture.
