Dabeli Fondue is a creative twist on the popular street food recipe from Kutch, Gujarat. This fusion dish combines the flavors of traditional dabeli with the creamy richness of fondue, creating a delightful and indulgent treat.


Ingredients:

- Boiled Potatoes - 2 nos.

- Masala Peanuts - 4 tbsp

- Cheese - 3 to 4 cubes

- Bread Buns, cut into small pieces - 2 nos.

- Oil - 2 tbsp

- Red Chilli Powder - 1 tbsp

- Salt to Taste

- Dabeli Masala - 3-4 tbsp

- Water as Required

- Cream Cheese - ¼ cup + 1 tbsp

- Butter + Oil - 2 tbsp

- Baby Potato - 10 pcs

- Garlic Chutney - 2 tbsp

- Tamarind Chutney - 3-4 tbsp

- Sev - 2 tbsp (Optional)

- Mozzarella Cheese - ¼ cup

- Fresh Coriander - 2 tbsp

- Fresh Anardana (Pomegranate Seeds) - 2 tbsp (optional)

- Fresh, Grated Coconut - 2 tbsp (optional)


For Serving:

- Mini Khari Biscuit

- Aloo Wafer

- Masala Pav

- Masala Baby Potato


Method:

1. Heat oil in a pan. Add garlic chutney and sauté for a while. Then add tamarind chutney and mix well.

2. Add dabeli masala, salt, and red chilli powder. Mix well.

3. Add boiled, mashed potatoes and mix. Cook for a while, then set aside to cool.

4. Transfer the cooled mixture to a mixer jar and blend to a smooth paste. Add 2 cubes of cheese, half of mozzarella cheese, and half of cream cheese. Blend until smooth.

5. In another jar, grind masala peanuts to a powder.

6. In a pan, heat oil and butter. Add garlic chutney, tamarind chutney, mozzarella cheese, cheese spread, and grated cheese. Mix well.

7. Add the potato paste and peanut powder to the pan. Mix well.

8. Adjust the consistency with water if needed.

9. Transfer the mixture to a fondue pot and garnish with remaining cheese, masala peanuts, and fresh coriander.

10. Serve with masala baby potatoes, mini khari biscuits, masala pav, and salted potato wafers.

11. Optional garnishes include sev, fresh grated coconut, anardana, and black raisins.
