Dhokla Chicken Tikka Sandwich - By Chef Hardev Singh

One fusion recipe, dhokla stuffed with chicken tikka, is my all-time favorite.

I love to eat Gujarati food, especially dhokla, jalebi, and khandvi. Gujarati food is known for its sweet and sour taste, and steamed dhokla is my favorite item in Gujarati cuisine. I've used dhokla in many recipes with different ingredients. One fusion recipe, dhokla stuffed with chicken tikka, is my all-time favorite. Ingredients:

For Chicken Tikka:

- Chicken Thigh Fillets - 500 gm

- Fresh Ginger Garlic Paste - 2 tbsp

- Cumin Powder - 1 tbsp

- Coriander Powder - 1 tbsp

- Garam Masala - 1 tbsp

- Deggi Mirch Powder - 2 tsp

- Red Chilli Powder – 1 tsp

- Lemon Juice - 1 tbsp

- Kasuri Methi - 1 tbsp

- Hung Curd - 120 gm

- Mustard Oil - 3 tbsp

- Salt to Taste

- Fresh Coriander for Garnish

For Kachumber Salad:

- Medium Sized English Cucumber (Julienned) - 1 No.

- Medium Sized Onion (Julienned) - 1 No.

- Medium Sized Carrot (Julienned) - 1 No.

- Medium Sized Beetroot (Julienned) - 1 No.

- Bell Peppers (Julienned, Each one of Different Colors) - 3 Nos.

- Iceberg Lettuce (Julienned) - ½ cup

- Chopped Green Chilli - 2 Nos.

- Pomegranate Kernels - 2 tbsp

- Chaat Masala - 2 pinches

- Fresh Coriander Leaves - a few

- Lemon Juice - 1 tbsp

- Chaat Masala - ½ tbsp           

For Sandwich:

- Dhokla - Cut into Bricks

- Mint Chutney (or mayo/tomato ketchup, optional)

- Onion Rings (optional)

- Pomegranate Kernels for Garnish

- Fresh Coriander for Garnish

- Fried Chilli for Garnish

           

Instructions:

Chicken Tikka Preparation:

1. Place chicken in a large bowl.

2. Add lemon juice and mix. Season with some salt. Cover and marinate in the refrigerator for 10 minutes.

3. In another large bowl, add all the remaining chicken tikka ingredients to make a marinade.

4. Add the marinated chicken to the marinade bowl. Mix well. Cover and marinate for another 30 minutes or overnight if possible.

5. Thread the chicken pieces onto skewers and cook them in the oven or a preheated tandoor until done.           

Kachumber Salad Preparation:

1. In a large mixing bowl, add all the vegetables and ingredients for the kachumber salad and mix them well.           

Sandwich Assembling:

1. Preheat the sandwich griller.

2. Take the dhokla brick and cut it in half.

3. Apply mint chutney (or mayo/tomato ketchup, optional) on both sides of the dhokla.

4. Add chicken tikka, kachumber salad, and onion rings (optional) between the dhokla halves.

5. Grill the sandwich for 1 minute in the griller.

6. Cut the sandwich into 2 pieces and garnish with pomegranate kernels, fresh coriander, and fried chilli.

7. Serve hot and enjoy.
