Ingredients:
- Baby Potato - 250 gm
- Tomato Paste - 1 cup
- Chopped Onion - 50 gm
- Chopped Garlic - 1 tbsp
- Chopped Coriander - 1 tbsp
- Curd - 100 gm
- Cumin Seeds - ½ tsp
- Fennel Powder - ½ tsp
- Red Dry Chilli - 2-3

- Hing (Asafoetida) - ½ tsp
- Turmeric Powder - 1 tsp
- Red Chilli Powder - ½ tbsp
- Coriander Powder - ½ tbsp
- Cumin Powder - 1 tsp
- Kashmiri Chilli Powder
- 1 tsp
- Ghee - 1 tbsp
- Refined Oil - 150 gm
- Salt - To taste
- Water - 1 cup
Method:
1. Peel and wash the
small-sized potatoes, then fry them in refined oil until golden brown. Set
aside.
2. Heat some oil in a
pan or kadhai. When the oil turns hot, add cumin seeds. Simultaneously, add
chopped garlic, dry chilli, hing, and chopped onion. Fry until the onion turns
golden brown.
3. Add all the spices -
turmeric powder, red chilli powder, coriander powder, fennel powder, Kashmiri chilli
powder, and salt to taste. Stir well and add some water.
4. Now, add tomato paste
and whisked curd. Cook for 4 to 5 minutes over medium to low flame.
5. Add the fried
potatoes into the gravy and cook for another 4 to 5 minutes. Then, add ghee and
chopped coriander.
6. Dum Aloo Marwadi is
now ready. Garnish with coriander leaves and serve with fulka or rice.
