"Village-style thandai, gharana-style cooking, and farm-to-table experiences showcase the unique flavors of our region," he says. "Chandauli's pedhe, Mirzapur's gujiya, Bhadohi's kachoris, and Gazipur's rasgulla – each village has its specialty, and they all tell a story of tradition and care.”

Varanasi's legendary sweet tooth is famous, with Bengal Sweet House standing as a culinary institution in the city. Chef Pathak's eyes light up when describing their iconic imarti and rabri.

"Our event highlighted the region's fresh, organic ingredients," Chef Pathak shares. "Freshwater from the Mirzapur foothills nourishes the surrounding farmland, yielding crisp, organic vegetables that are the foundation of our rural cuisine.”

The competition's catering showcased these local treasures.

           

"Guests were treated to dishes crafted from the finest local ingredients," Chef Pathak explains. "Thandai, baati-chokha, and malaiyyo were the stars of the event, winning the hearts of everyone who attended.”

           

Rural Revival

For Chef Pathak, the heart of India's culinary future lies in its rural areas.

           

"India is a country of villages, and we must empower these areas," he says passionately. "Rural places hold immense potential, and I invite food enthusiasts to explore beyond Varanasi – visit Bhadohi, Mirzapur, Ballia, and surrounding cities to discover their culinary treasures.”

Chef Pathak envisions creating a food tour trail through eastern Uttar Pradesh, where travelers can experience authentic local flavors.

           

"Banaras and its neighboring districts offer a culinary journey like no other," he suggests. "Discover Bhadohi's kachoris, Mirzapur's gujiya, Ballia's unique fish dishes, and Gazipur's rasgulla.
