Gahat Ka Fanaa - By Chef Vinod Prasad Bhadoni

Ingredients:

1. Gahat - 200 gm

2. Mustard Oil - 30 ml

3. Jakhya - 5 gm

4. Ginger - 5 gm

5. Garlic - 5 gm

6. Onion - 100 gm

7. Tomato - 150 gm

8. Green Chillies - 2 nos.

9. Turmeric Powder - 8 gm

10. Red Chilli Powder - 10 gm

11. Coriander Powder - 10 gm

12. Salt - To Taste

13. Ghee - 20 gm

14. Red Chilli (Whole) - 2 nos.

15. Chopped Coriander - 3 gm

16. Mint Sprig - 1 no.

 

Method:

1. Soak Gahat pulses in water for 7 to 8 hours. Then grind them.

2. Heat mustard oil in a pan. Add jakhya, ginger and garlic and sauté for two minutes.

3. Further add onion & green chillies and sauté till onion turns brown.

4. Add chopped tomato & sauté.  Add turmeric, chilli powder & coriander powder and cook till the spices release oil.

5. Add grinded Gahat & cook it for 20 minutes with water till it gets thick consistency.

6. Finish it off with pouring ghee.

7. Serve hot Gahat ka Fanaa with steamed Jhangora. Garnish with fried red chilli & a sprig of mint.
