Hare Matar ke Shammi Kebab - By Chef Brijesh Singh

Ingredients:

- Green Peas - 600 gm

- Boiled Potatoes - 100 gm

- Cottage Cheese - 100 gm

- Green Chilli (chopped) - 2 nos.

- Ginger (chopped) - 15 gm

- Coriander (chopped) - 25 gm

- Ginger-Garlic Paste - 1 tsp

- Black Salt - To taste

- Yellow Chilli Powder - 1 tsp

- Garam Masala - 1 tsp

- Chana Powder - 50 gm

- Refined Oil - for frying


Method:

1. Wash and boil green peas until tender, then drain and squeeze out excess water using a cloth. Transfer to a bowl and mash them using a ladle or wooden spoon.

2. Grate boiled potatoes and cottage cheese, then add them to the mashed green peas along with chopped green chilli, ginger, coriander, garam masala, and chana powder. Mix thoroughly.

3. Add ginger-garlic paste, black salt, yellow chilli powder, and mix well until it forms a smooth dough.

4. Divide the mixture into 16 equal portions. Shape each portion into balls and then flatten them between your palms to form round medallion-shaped tikkis.


Cooking:

1. Heat oil in a pan for deep frying. Once the oil is hot, carefully add the kebabs and fry them until they turn crisp and golden brown.

2. Serve the hot kebabs with your choice of salad and chutney.
