Ingredients:
For
the Herb Butter:

1 stick of Salted Butter, softened

1/4 cup Finely Minced Fresh Parsley
-
1 Garlic Clove, finely minced
-
Zest and Juice of 1/2 Lemon

Salt and Pepper, to taste
For
the Chicken:
-
4 Boneless, Skinless Chicken Breasts
-
1/2 cup All-Purpose Flour
-
2 Large Eggs
-
1 cup Breadcrumbs
-
Salt and Pepper, to taste

Oil for frying
Method:

In a bowl, mix together softened butter, minced parsley, minced garlic, lemon
zest, lemon juice, salt, and pepper. Place the mixture in the freezer for 20 to
25 minutes, or until very firm.

Place each chicken breast between two pieces of cling film. Using a meat mallet
or rolling pin, gently pound the chicken until it is of even thickness. Set
aside.

Once the butter mixture is chilled and firm, divide it into 4 equal-sized
pieces.

Remove the top layer of cling film from each chicken breast. Season the chicken
with salt and pepper, then place one piece of the chilled herb butter in the
center of each chicken breast. Roll up the chicken tightly around the butter,
ensuring it is sealed tightly. Twist the ends of the cling film to further
secure the chicken roll. Freeze the chicken rolls for 15 to 20 minutes, or
until firm.

Prepare three shallow bowls for the standard breading procedure: one with
seasoned flour, one with whisked eggs, and one with breadcrumbs.

Remove the chicken rolls from the freezer and discard the cling film. Coat each
chicken roll in the seasoned flour, then dip it in the whisked eggs, and
finally coat it evenly with breadcrumbs. Repeat the breading process for all
the chicken rolls.

Heat oil in a pan over medium-high heat. Fry the breaded chicken rolls in the
hot oil for 2 to 3 minutes per side, or until golden brown and cooked through.

Once cooked, remove the chicken rolls from the oil and place them on a paper
towel-lined plate to drain excess oil. Let them rest for 2 to 3 minutes before
slicing and serving.
