Kale Chane ke Kebab - By Chef Brijesh Singh

Indulge in Chef Brijesh Singh's flavorful twist on Kale Chane ke Kebab, a tantalizing vegetarian delight!

Cooking Time: 7-8 minutes


Ingredients:

- Dry Black Gram: 500 gm

- Sprouted Black Gram: 100 gm

- Cottage Cheese: 200 gm

- Chopped Coriander: 3 tbsp

- Chopped Green Chilli: 2 tbsp

- Chopped Ginger: 1 tbsp

- Chopped Onion: 2 tbsp

- Chopped Spring Onion (green): 2 tbsp

- Chana Masala: 1 tsp

- Amchur: 1 tsp

- Yellow Chilli Powder: 1 tbsp

- Black Salt: To taste

- Breadcrumb: 60 gm

- Soft Butter: 2 tbsp

- Refined Oil: for frying


Method:

1. Clean, wash, and soak black gram overnight. Boil and cook black grams; drain water and let it cool.

2. In a bowl, mash boiled gram and cottage cheese with the help of a palm. Add chopped coriander, green chilli, ginger, onion, spring onion, chana masala, amchur, yellow chilli powder, black salt and mix well.

3. Add breadcrumb and soft butter and mix thoroughly with an open palm to make a smooth dough.

4. Divide this mixture into 15 equal portions and make balls.


Cooking:

1. Apply each ball mixture in a cutlet shape. Put sprouted black gram on top of this shape and fry till golden brown.

2. Serve hot along with a choice of salad and chutney.
