Kolkata Special Kheer Singara is a delightful sweet snack that combines the richness of kheer (rice pudding) with the crispiness of singara (samosa). This unique fusion dish is a popular street food in Kolkata, enjoyed by people of all ages. With its creamy filling and crunchy exterior, Kheer Singara is sure to tantalize your taste buds.

Ingredients:

For Outer Surface Dough:
- 2.5 liters Full Fat Milk
- 200 gm White Sugar

For Filling:
- 300 gm Mawa (Khoya)
- 200 gm Sugar
- 250 ml Full Fat Milk
- 2 gm Cardamom Powder

For Garnish:
- 20 gm Sliced Almonds
- 20 gm Green Pistachios, chopped
- 10 Silver Leaves (Varak)

Method:

For Surface Dough:
1. In a large pot, boil the full-fat milk with 200 gm sugar until it reduces to 90% of its original volume.
2. Stir the mixture continuously with a wooden spatula to ensure it becomes smooth and creamy.
3. Allow the mixture to cool and rest for 3-4 hours until it thickens and forms a dough-like consistency.

For Filling:
1. In an iron kadhai or heavy-bottomed pan, combine the full-fat milk, sugar, and grated mawa (khoya).
2. Cook the mixture over low heat, stirring constantly, until it thickens and reaches a coagulated consistency.
3. Add cardamom powder and mix well. Remove from heat and let it cool.

For Assembling:
1. Take a steel or wooden plate and mash the prepared outer surface dough until it forms a smooth dough.
2. Roll out the dough into an oval shape and cut it in half.
3. Place a portion of the prepared filling on one half of the dough and fold it over to form a triangular shape, similar to a samosa.
4. Seal the edges tightly to ensure the filling remains intact.
5. Decorate the Kheer Singara with silver leaves, sliced almonds, and chopped pistachios.

Kolkata Special Kheer Singara is now ready to be served and enjoyed as a delightful sweet snack or dessert. Serve it warm or at room temperature for the best taste experience.
