Prior to joining Mahindra Holidays & Resorts, Lallan served as an Executive Chef at various esteemed establishments, including Fairfield by Marriott in Ahmedabad, The Fern Hotels & Resorts in Diu, and Evershine Resort in Mahabaleshwar. In these roles, he managed kitchen operations, crafted diverse and innovative menus, and maintained high standards of food quality and service.

Lallan's culinary journey also includes his tenure as an Executive Sous Chef at Fortune Inn Exotica, Pune, and Evershine Keys Prima Hotel Mahabaleshwar. His responsibilities involved assisting in the management of kitchen staff, ensuring the highest standards of food preparation, and contributing to the development of new recipes and menu items.

He began his career as a Junior Sous Chef at Welcome Pine N Peak Hotel in Pahalgam, J&K, where he honed his skills in Indian cuisine. He later expanded his expertise internationally, working as an Indian Chef for Purple Honey Group and Al Wasita Emirates in the UAE, and Vista Hotels Ltd in New Delhi.
