Lehsuni Paneer Tikka - By Chef Brijesh Singh

Serves - 4

Cooking Time - 6-8 minutes   

Ingredients:

Cottage Cheese - 850 gm

Hung Curd - 150 gm

Cream - 50 ml

Garlic Paste - 30 gm

Chopped Garlic - 10 gm

Chopped Green Chilli - 5 gm

Chopped Coriander - 45 gm

Salt - To taste

Deggi Mirch Powder - 1 tbsp

Red Chilli Powder- ½ tbsp

Turmeric Powder - ½ tbsp

Garam Masala - 1½ tbsp

Ajwain Powder - 1 tbsp

Chaat Masala - 1 tbsp

Roasted Gram Flour - 4 tbsp

Lemon Juice - 10 ml

Extra Virgin Olive Oil- 100 ml

Stuffing:

Garlic Paste - 60 gm

Cheese Cube - 10 gm

Chaat Masala - 2 tbsp

 

Method:

1. Cut cottage cheese into square cubes (1 ½*1 ½ inch). Give a slit from the center without disjoining. Keep aside.

2. In a bowl, put garlic paste, chaat masala and mix. Apply this mixture in equal quantity inside the cottage cheese by using finger and keep aside.

Marination:

1. Take hung curd in a bowl and add cream, garlic paste, chopped garlic, green chilli, coriander, salt, red chilli powder, turmeric, garam masala, ajwain powder, chaat masala, roasted gram flour, vinegar, refined oil and mix thoroughly.

2. Put stuffed paneer pieces into this marinade and keep aside for 1½ - 2 hours.   

Cooking:

1. Take a skewer and skew paneer pieces one by one keeping an inch gap (half cut onion or small potato can be used to prevent slipping).

2. Roast/ grill over charcoal or tandoor at moderate temperature for 6-8 minutes.

3. Serve hot with choice of salad and mint chutney/Pineapple Chutney/Garlic curd.
