Makai Cheesy Kaju Tikki by Chef Rajat Ranjeet is a delightful fusion of corn, cheese, and cashews, offering a rich, savory experience for every bite.
Ingredients:

Grated Mozzarella Cheese - 250 gms
•
Grated Cottage Cheese - 150 gms
•
Mashed Boiled Potato - 100 gm
•
Chopped American Corn - 50 gms
•
Dhaniya Pudina Chutney - 1 tbsp
•
Raisins - 50 gms
•
Chopped Green Chilli - ½ tsp
• Few
Whole Cashew Nuts
•
Refined Flour - 1 tbsp
•
Corn Starch - ½ tsp
•
Breadcrumbs -150 gms
•
Black Salt - ½ tsp
•
Aniseed Powder - ½ tsp
•
Cumin Powder - ½ tsp
•
Refined Oil/Desi Ghee - 1 liter
Method:
1. In
a mixing bowl, combine grated Mozzarella cheese, Cottage cheese, Boiled
potatoes, and chopped American corn.
2.
Mash all ingredients together and mix well.
3.
Add seasoning: black salt, cumin powder, and aniseed powder. Mix thoroughly.
4.
Add refined flour and corn starch as binding agents. Mix well to form a
dough-like consistency.
5.
Form even-sized balls from the dough and flatten them.
6.
Stuff each ball with chopped green chilli, cashew nuts, raisins, and a bit of
green chutney. Shape them into tikkis.
7.
Dip each tikki in a slurry (made from refined flour and water) and coat with
breadcrumbs.
8. Deep fry for a richer taste or shallow fry for a healthier
option.
9.
Serve hot with salad greens and roasted garlic yoghurt dip.
