Ghevar is a traditional Rajasthani sweet dish, also very popular in the western part of Uttar Pradesh.

Ghevar is a traditional Rajasthani sweet dish, also very popular in the western part of Uttar Pradesh.

Ingredients:

1. Sugar - 750 gm

2. Water - 500 ml

3. Green Cardamom - 1 tsp

4. Rose Water - 4 tbsp

5. Desi Ghee - 100 gm

6. Ice Cubes - Few

7. Refined Flour - 300 gm

8. Raisins - 30 gm

9. Pistachios - 30 gm

10. Almonds - 20 gm

11. Rose Petals - 8-10 nos

12. Lemon Juice - 40 ml

13. Mint Leaves - Few

14. Milk full cream - 1.5 liters

 

Method:

1. Firstly, prepare sugar syrup of one-thread consistency with an equal quantity of sugar and water.

2. Cook on slow fire; when one-thread consistency is reached, add half a teaspoon of green cardamom powder and rose water. Set aside.

3. Take solidified ghee in a bowl, add some ice cubes, and rub vigorously until the ghee becomes very white like cream.

4. Add water and refined flour. Mix well to make a smooth, thin batter and add some lemon juice.

5. Heat a saucepan filled with half of the ghee.

6. Pour the batter slowly into the center. When the ghevar turns golden brown, lift it carefully and place it on a wire mesh to drain excess ghee.

7. Pour hot sugar syrup over the ghevar.

8. Make rabri by reducing milk, sugar, and cardamom powder, then coat it evenly on top.

9. Garnish with dry fruits, rose petals, and fresh mint leaves.
