Millets are truly a super grain! They can provide significant health benefits. Millets love hot, dry climates, which are becoming increasingly common due to global warming, meaning they will continue to be sustainable food sources in the future. Hummus recipes also contain tahini, an ingredient derived from sesame seeds. Sesame seeds contain high levels of vitamin E, which works as an antioxidant to fight free radicals.


Ingredients:

- Millets: 100 gms

- Tahina Paste: 20 gms 

- Juice of 2 lemons

- Garlic: 15 gms

- Salt: 10 gms

- Pepper: 10 gms


Method:

1. Boil the millet until soft and cooked.

2. Add the cooked millet, tahini paste, lemon juice, garlic, and seasoning to a blender and blend until a smooth and creamy texture is achieved.

3. Scoop the millet hummus onto a plate and spread it evenly, using circular motions with the back of the spoon.

4. Drizzle with olive oil, additional seasoning, and herbs. Use za'atar, chili flakes, and fresh coriander.
