Moroccan-Flavored Mushroom Pastila - By Chef Harkesh Singh
A delicate fusion of Moroccan spices and rich mushroom flavors, Chef Harkesh Singh’s Pastila is a gourmet delight.
Ingredients:
1. Shiitake Mushrooms - 50 gm
2. White Fungi - 50 gm
3. Button Mushrooms - 50 gm
4. Straw Mushrooms - 50 gm
5. Roasted Cumin Powder - 1 tsp
6. Black Pepper Powder - 1 tsp
7. Clove Powder - 1 tsp
8. Cinnamon Powder - 1 tsp
9. Dried Rosemary - 1 tsp
10. Salt - 1 tsp
11. Butter - 30 gm
12. Fillo Sheets - 8 Nos.
13. Shallots - 10 gm
14. Garlic - 5 gm
Instructions:
1. Cut all the mushrooms into small pieces.
2. In a non-stick pan, melt the butter. Add chopped
garlic and shallots to the pan and sauté until softened. Add the chopped
mushrooms and stir well.
3. Add the roasted cumin powder, black pepper powder,
clove powder, cinnamon powder, dried rosemary, and salt. Mix well and cook for
about 5 minutes. Set aside to cool.
4. Preheat the oven to 180°C (350°F). Grease a baking
bowl with butter.
5. Arrange the fillo sheets in the bowl, layering them
and brushing each layer with butter. Spread the mushroom mixture on top of the
fillo sheets. Cover with additional fillo sheets, brushing each layer with
butter.
6. Bake in the preheated oven for 10 minutes, or until
the fillo sheets are golden and crispy.
7. Serve with herbed rice and exotic vegetables.
