Rajasthani Lehsun Ka Akkha Palak - By Chef Manoj Kumawat

Ingredients:

- Fresh baby spinach: 500 gm

- Ghee: 100 gm

- Whole red chilli: 5 nos

- Jeera (cumin seeds): 5 gm

- Garlic, peeled wholly: 50 gm

- Chopped green chilli: 20 gm

- Chopped ginger: 10 gm

- Chopped onion: 100 gm

- Diced tomato: 100 gm

- Turmeric powder: 5 gm

- Yellow chilli powder: 5 gm

- Chopped green coriander: 20 gm

 

Method:

1. Clean and cut the spinach and set aside.

2. In a handi, heat ghee over a slow flame. Temper the whole red chilli and jeera. Then add garlic, chopped ginger, chopped green chillies, and chopped onions. Saute until it turns golden brown.

3. Add diced tomato and cook for some time. Then add turmeric powder, salt, and yellow chilli powder. Cook the masala.

4. Add the fresh baby spinach and cook for some time. Then add chopped green coriander leaves and mix well.

5. Remove from the heat and serve hot with Rajasthani breads.
