A kind of kheer, in which rice is cooked in freshly harvested sugarcane juice. A dish that plays a significant role in East UP and Bihar's harvest celebration.
Ingredients:
- 1 cup Broken Short Grain Rice
- 1.5 cup Sugarcane Juice
- 2 pods Cardamom
- ½ cup Milk
- ¼ cup Mixed Dry Fruits (For garnish)
- 2 cups Water
Method:
1. Wash and soak the rice for a minimum of an hour in warm water.
2. In a thick-bottomed pan, put the rice to boil with 2 cups of water.
3. Once the rice is half cooked, add 1.5 cups of sugarcane juice. Cook it completely in a covered pan to attain a smooth consistency.
4. Let it cool and add half a cup of lukewarm milk (optional).
5. Serve it, garnished with roasted dry fruits of your choice.
