Ingredients:

Thawed Turkey - 1 No.

Softened Butter - 8 tbsp

Garlic Sliced in Half - 1 head

Cloves Minced into Paste - 10 Nos.

Medium Onion Cut into Wedges - 1 No.

Lemon Cut into Wedges - 1 No.

Orange Cut into Wedges - 1 No.

Fresh Sage

Fresh Rosemary

Fresh Thyme

Fresh Parsley

Pink Salt

Freshly Ground Pepper

 

Method:

1. Preheat the oven to 325 degrees Fahrenheit. Remove the turkey neck and giblets. Pat the turkey dry, both inside and out, and generously season the inside with salt and freshly ground pepper.

2. Place the turkey on a roasting tray. Fill the turkey cavity with onions, whole garlic cloves (cut in half), lemons, oranges, and 2-3 stems of each herb.

3. In a bowl, combine 4 tbsp of softened butter with 1 tsp of salt, ½ tsp of freshly ground black pepper, 10 cloves of garlic (paste), 1 tbsp of minced sage, 1 tbsp of chopped parsley, 1 tsp of minced rosemary, and 1 tsp of minced thyme leaves. Gently loosen the skin from the turkey breast and legs and spread the garlic herb butter under the skin.

4. Tuck the wing tips under and use the extra skin at the base of the backbone to secure the turkey legs together. Spread the remaining softened butter all over the outside of the turkey, then season it generously with salt and freshly ground black pepper.
