Roastii Potatoes - By Chef Nellu Kaura

Ingredients:
Medium Size Potatoes - 6 Nos.
For marination
• Hung curd - 1 ½ tbsp
• Ginger & Garlic -
1 tsp each
• Lemon Juice - 2 tsp
• Red Chilli Powder - ½
tsp
• Oil - 1 tbsp
• Salt - To Taste
• Pepper - ¼ tsp
• Jeera Powder - ½ tsp
• Tandoori Masala - 1
tsp
• Ajwain - 1 tsp
• Orange, Red Colour or
Haldi
• Elaichi (crush the
seeds) - 2 Nos.
• Besan - 2 tsp
• Chaat
Masala - ½ tsp
For filling
• Crumbled Paneer - ½
cup
• Chopped Mint
Leaves - 2 tsp (optional)
• Chopped Dharma leaves
- A Few
• Chopped Green Chillies
- 2 to 3 Nos.
• Salt & Chilli
Powder - To Taste
• Garam Masala - ¼ tsp
• Roasted Jeera Powder -
¼ tsp
• Chaat
Masala - ¼ tsp
Method:
1. Slice the potatoes
horizontally, scooping out the center, but leaving a border around. Set them
aside.
2. Mix all the marinade
ingredients together until a smooth paste forms.
3. Place the potatoes in
this marinade and let them sit for an hour.
4. Use a fork to roughen
the surface of the potatoes so that they hold the marinade.
5. Mix together all the
filling ingredients and stuff the potato shells with it. (You can also sprinkle
cheese on top).
6. Coat the potatoes
with some batter and continue grilling until the coating becomes crisp and dry.
7. Sprinkle them with some chaat masala and serve hot.
