I love to eat salad. It is the healthiest option for vegetarian as well as non-vegetarian person. There are a lot of options of salad combination.

I love pasta in the salad. The Spaghetti Kachumber Salad recipe is one of my favourite recipes for the salad lover and vegetarian person. Try it once and relish it.

Ingredients:

Spaghetti Pasta – 150 gm

English Cucumber (Medium size,  Julienned) - 1 No.

Onion (Medium size, Julienned) - 1 No.

Carrot (Medium size) - 1 No.

Beetroot (Medium size, Julienned)- 1 No.

Bell Peppers (3 types, Julienned)- 3 Nos.

Iceberg Lettuce (Cleaned and  julienned) - ½ cup

Cherry Tomatoes (cut into 1 by 2) - 4-5 Nos.

Mint Leaves - For Garnish

Green Chillies (Chopped)- 2 Nos.

Pomegranate Kernels - 2 tbsp

Balsamic Vinegar - 1 tsp

Oregano - ½ tsp

Chilli Flakes - ½ tsp

Extra Virgin Olive Oil - 1 tbsp

Salt and Pepper - To Taste

Lemon Juice - ½ tsp

Chat Masala - 2 pinches

Few Fresh Coriander Leaves

Roasted Cumin Powder - ½ tsp

 

Instructions:

1. Boil the spaghetti pasta in a pan and let it cool.

2. In a bowl, add oregano, chili flakes, chat masala, lemon juice, cumin powder, salt, pepper, balsamic vinegar, and olive oil.

3. Make a dressing by mixing the ingredients in the bowl.

4. In a large mixing bowl, add all the vegetables and mix well.

5. Add the dressing to the vegetables and mix thoroughly.

6. Take a serving bowl or plate and place the salad in the centre.

7. Garnish with chopped mint leaves, cherry tomatoes, and pomegranate kernels.

8. Enjoy this tasty salad and share it with your friends and family.
