Special Ragi Millet Barfi - By Chef Mahesh Singh

Indulge in Chef Mahesh Singh's special Ragi Millet Barfi, a delightful fusion of tradition and innovation.

Ingredients:

- 3 tbsp ghee

- 1 cup Ragi (Koda) flour

- ½ cup jaggery, finely chopped

- 2 tbsp almond powder

- 2 tbsp milk powder

- ¼ cup milk

- ¼ tsp cardamom powder


Instructions:

1. Heat ghee in a broad non-stick pan. Add ragi flour and cook on a medium flame for 3 minutes, stirring continuously.

2. Add jaggery and mix well. Continue cooking on a medium flame for 2 to 3 minutes, stirring continuously.

3. Add almond powder, milk powder, milk, and cardamom powder. Mix well and cook on a medium flame for 2 to 3 minutes, stirring continuously.

4. Transfer the mixture into a greased aluminum tin and spread it evenly.

5. Sprinkle almond flakes on top.

6. Allow it to cool for some time, then refrigerate for 1 hour or until firm.

7. Cut it into circular pieces using a cutter.

8. Store it in an airtight container or use as required.
