Spinach and Cheese Quiche - By Chef Indrajit

Ingredients:  


For Quiche dough:

- Amul Butter - 250 gm

- Flour - 500 gm

- Salt - 5 gm

- Oregano - 10 gm

- Chilled Water - As per requirement  


For Spinach mixture:

- Spinach - 250 gm

- Onion - 50 gm

- Garlic - 25 gm

- Seasoning - To taste

- Oil - 50 ml

- Feta Cheese - 100 gm  


For Custard:

- Milk - 500 ml

- Eggs - 5 nos.

- Salt - To taste

- Black pepper powder - 20 gm  


Method:  


To prepare the Spinach mixture:

1. Blanch the spinach and chop it.

2. Sauté onion and garlic in butter until transparent.

3. Add spinach, salt, and black pepper powder.

4. Mix it with Feta cheese.

5. Cook it properly and keep it at room temperature.  


To prepare the quiche dough:

1. Mix flour, seasoning, oregano, and butter.

2. With the help of chilled water, prepare the dough.

3. Now, using a quiche mould, give it a shape.  


To prepare the custard:

1. Warm the milk.

2. Add eggs, seasoning, and black pepper.

3. Whisk it properly and strain it.  


To assemble:

1. Mix spinach mixture and custard, and pour it into the quiche mould.

2. Bake at 185 degrees Celsius for approximately 22-25 minutes.

3. Gratinate with Amul cheese.

4. Serve hot for breakfast or evening snacks.
