Ingredients:
- Unsalted Butter - 1 tbsp
- Olive Oil - 1 tbsp
- Chopped Leeks - 2 cups
- Chopped White Onion - 1 cup
- Chicken Stock - 5 cups
- Frozen Peas - 5 cups
- Frozen or Fresh Spinach - 1 cup
- Kosher Salt - 2 tsp
- Fresh Ground Black Pepper - ½ tsp
- Fresh Cream - ½ cup
- Chopped Chives- ½ cup
- Croutons or Bread Crisps - For Serving
Directions:
1. Heat the olive oil and butter
in a large saucepan over medium-low heat.
2. Add the chopped leeks and
onion, cooking for 5 to 10 minutes until both are tender.
3. Pour in the chicken stock and
increase the heat to high, bringing it to a boil.
4. Add the peas and spinach,
cooking for 3 to 5 minutes until the peas are tender and the spinach is wilted.
5. Season the soup with kosher
salt and fresh ground black pepper to taste. Remove from heat and let it cool
slightly.
6. Puree the soup in batches,
blending 1 cup of soup at a time until smooth.
7. Pour the pureed soup back into
the pot. Whisk in the fresh cream and chopped chives, adjusting the seasoning
if necessary.
8. Serve the soup hot or chilled, accompanied by croutons or toasted bread, and garnish with a swirl of fresh cream.
