Ingredients:

 

- Olive Oil: 1 tbsp

- Italian Seasoning: 1 tsp

- Skinless Boneless Chicken Breasts: 4 Nos.

- Ricotta Cheese: 4 ounces

- Grated Mozzarella: 4 ounces

- Grated Parmesan Cheese: 1/4 cup

- Chopped Fresh Spinach: 1 1/2 cups

- Minced Garlic Clove: 1 No.

 

Method:


1. Preheat the oven to 375 degrees and grease a baking dish.

2. In a small mixing bowl, combine olive oil and Italian seasoning, set aside.

3. Place a chicken breast on a cutting board and cut lengthwise.

4. Pour the prepared rub all over the chicken.

 

While the chicken is marinating, prepare the cheese filling.


5. In a mixing bowl, combine ricotta cheese, mozzarella cheese, parmesan cheese, chopped fresh spinach, and minced garlic. Season with salt and pepper to taste, then mix until well combined.

6. Stuff each breast with the cheese mixture.

 

Place the stuffed breasts into the prepared dish and bake for 25 minutes until the chicken is nicely golden brown. Serve with cherry tomato salad!
