Vegetable Galouti Chilli Poppers - By Chef Rajat Ranjeet

A delightful fusion of flavors, Vegetable Galouti Chilli Poppers by Chef Rajat Ranjeet offer a perfect blend of spice and indulgence.

Ingredients:

• Green Chillies (less spicy) - 12 nos.

• Bottle Gourd - 250 gms

• Ridge Gourd - 150 gms

• Gram Flour - 200 gms

• Cashew Paste - 50 gms

• Ginger Garlic Paste - 30 gms

• Green Chilli Paste - 20 gms

• Peppercorns - 6 nos.

• Cloves - 5 nos.

• Mace - 10 gms

• Nutmeg - 5 gms

• Caraway Seeds - 5 gms

• Coriander Powder - 5 gms

• Kasuri Methi Powder - 5 gms

• Lemon Juice - 1 tbsp

• Salt - to taste

• Refined Flour - 500 ml

              

Method:

1. Blanching:

• Blanch the Bottle Gourd and Ridge Gourd with salt.

• Grind them to make a fine paste.

              

2. Preparing the Mixture:

• To the vegetable paste, add Cashew Paste, Ginger Garlic Paste, and Green Chilli Paste.

 

3. Spice Mix:

• Roast the Peppercorns, Cloves, Mace, Nutmeg, and Caraway Seeds. Powder them finely.

• Add the roasted Gram Flour and the powdered spices to the vegetable mixture.

              

4. Seasoning:

• Mix in Salt, Kasuri Methi Powder, and Lemon Juice. Combine well.

              

5. Preparing the Chillies:

• Slit the Green Chillies lengthwise and remove the seeds if desired.

• Stuff the prepared mixture into the Green Chillies and coat the outer layer evenly, similar to seekh kebabs.

              

6. Frying:

• Deep fry the stuffed Chillies in desi ghee or refined oil until golden brown and crispy.

              

7. Serving:

• Serve the Vegetable Galouti Chilli Poppers hot with yogurt or mint chutney.
